Bison Chilli

I'm cooking ahead for tomorrow's dinner.. I work full time and I'm a divorced mother of one with primary custody.. In other words you cook when you have time!!
Today I'm experimenting with some recent food purchases!! Here is    my list of ingredients:




1 16oz V8 sweet red pepper soup
2 15.5 oz cans of Brooks mild chili beans
1 10oz can of Best Choice diced tomatoes with green chilies with lime and cilantro
1 15oz can of Best Choice navy beans
1 16oz bag of 100% ground bison (from K.C. Buffalo Co.)
dash of seasoned salt
onion powder

I browned the bison(just like beef).. seasoned the meat with season salt.. added the remaining ingredients, heated on a medium heat till bubbling then reduced the heat to simmer stirring occasionally.. not sure how long I will simmer..maybe half an hour.. so far smells and tastes good!! You might ask why bison.. Bison is very low in fat, lower than chicken... I purchased mine from http://www.freshconnect.com/ . I have seen it at a local Price Chopper also.  It is more expensive, but I have enjoyed trying it!! To me it tastes similar to beef, but is actually more mild.. I think you could substitute it in for beef in any type of recipe

Weight-loss surgery

Hi this is my first post on my new blog!!.. First of all I would like to tell you I'm in the process of having weight-loss surgery.. I have gone to a seminar, gone to my medical doctor, and started the process with my insurance to get the surgery approved.. I'm not ready yet to post a photo or my weight at present, but I would like to chronicle my journey through this.. Surgery is not for everyone, and I don't need tips or comments about how I can do it without surgery.. Surgery is a tool to help with weight-loss, not an answer to my weight/food issues.. Tomorrow is my appointment with the surgeon.. It will be a major step towards having the surgery!! It doesn't seem like a reality at this time.
